The Hunter, by the sea

Throughout July & August, three wines from Tyrrell's of the Hunter Valley join the list at Shutters. Poured by the glass, available by the bottle, each one matched to a dish from the kitchen.

Tyrrell's has made wine at Pokolbin since 1858. Five generations on, the family still works the same dry-grown blocks, some of them planted before the First World War. This June we bring three of their wines to the bar: a late-disgorged sparkling, a single-vineyard Semillon, and an estate Shiraz. On the list until the end of June.

The wines

Blanc de Blancs 2017 Sparkling.

Eight years on lees before disgorging this winter. Pure and fine, with elegant floral notes, lemon and green apple, a thread of brioche underneath. One hundred per cent Chardonnay off the Casuarina block at Pokolbin, planted in 1980.

Poured alongside the oysters and caviar.


Single Vineyard HVD Semillon 2021 $18.50 by the glass. Also by the bottle.

Lemon sherbet on the nose. A tight line of citrus that runs the length of the palate, held by a soft, round acid. Powerful and precise. The fruit comes from the Sign Post block at HVD, planted in 1908 and still on its own roots.

Poured alongside the salt and pepper squid.


Estate Grown Shiraz 2023 $16 by the glass. Also by the bottle.

Medium-bodied and bright. Red fruit and savoury spice, soft tannins, a crisp line of acid through the middle. A blend off the old dry-grown blocks at Short Flat, Weinkeller and NVC, matured in large-format French oak.

Poured alongside a trio of cheese.
