For one night, Bruce Tyrrell AM brings the Hunter Valley to Coogee. He is the fourth generation of a family that has made wine at Pokolbin since 1858, and he has spent his life on one variety above all others: Hunter Semillon. At Shutters, he hosts a seated dinner and pours five wines from the Winemaker's Selection, the top of the Tyrrell's house, each matched to a course from our kitchen.


The man behind Vat 1

Bruce joined the family business in 1974, at twenty-three. In the years since he has become one of the most recognised names in Australian wine: a Member of the Order of Australia, a Hunter Valley Living Legend, and the custodian of Vat 1 Semillon, first made in the early 1960s and now counted among the great white wines of the world. The original slab hut his family built still stands on the estate. Five generations on, his children run the business beside him.

Seated canapés from 7pm, then three courses. Five wines across the night.

Pambula Sydney rock oysters, native finger lime dressing

Meredith goat cheese, brioche, green fig, pistachio

Vannella buffalo mozzarella tart, charred zucchini, basil

  • 2017 Blanc de Blancs - eight years on lees. Fine, floral, citrus-bright.

  • Vat 1 Semillon 2021 - the wine that made the family's name. Lemon and line.


FIRST COURSE

Cured New Zealand King salmon

Persimmon, Meyer lemon gel, avocado, ice plant, caviar

  • Vat 47 Chardonnay 2024 - Chablis in spirit. Crisp, lightly oaked, saline.


SECOND COURSE

Riverina beef short rib

Roasted celeriac, celeriac velouté, jus, watercress

  • Vat 9 Shiraz 2024 - once called Hunter River Burgundy. Soft spice, bright fruit.


THIRD COURSE

Dark chocolate tart

  • Vat 8 Shiraz Cabernet 2024 - richer and luscious. Built for chocolate and cheese.
