Every winter, in the cold ground of the Snowy Monaro, black Périgord truffle ripens beneath oak and hazelnut trees. It cannot be seen from the surface. It has to be found by nose.

Barbara Hill grows and hunts it herself, walking the rows of her farm outside Bredbo with truffle dogs she trained. For one night, the harvest comes to Coogee.

Our kitchen has built the menu around her fresh black truffle, and Barbara will be in the room to tell you how it came out of the ground.


The grower

Barbara Hill is the owner of Macenmist Black Truffles and Wines, a truffle farm and vineyard just outside Bredbo, in the NSW Southern Tablelands north of the Snowy Mountains. She planted her first inoculated truffle trees in 2008 and pulled her first truffle from the ground three years later.

Every truffle since has been found the same way. A trained dog marks the spot. A careful hand does the rest.

Between courses, Barbara will share the story of the farm. How truffle grows, how the dogs work, and why the deep cold of a Monaro winter matters to what ends up on your plate.
